Bottled on 15 February 2017. As stated on the label, as signed by the distiller, Peter Bignell, the rye is grown, malted, fermented, distilled, barrelled and bottled at the distillery. When it appeared two years ago this expression quickly sold out and now takes its place in the archive as a truly historic Belgrove edition.

Official Tasting Notes

Bright gold appearance. Immediately appealing and distinctive with its dill / pickle opening scents. Second pass offers chamomile tea, hints of boiled lolly, cedary oak and peppermint. A light, silky entry follows through to a super smooth and quite delicate profile featuring medium dry flavours of chamomile tea, sour dough bread and unusual notes of dill and caraway. Dry, mildly tannic finish. Aftertaste is subtle but shows good length.

Colour: red gold, copper

Nose: creamy and buttery, ripe tropical fruits like passion fruit and durian, grainy, fresh dough, sultanas, soft Xmas spices, jelly beans and icing for cakes, a little bit floral

Palate: grainy and malty, slightly peppery, green wood, milk chocolate and vanilla, spicy with a creamy texture, almonds, green walnuts and wet hay.

Finish: warming, spicy, creamy texture, salivating, quite long and intense with grainy attitudes

Distillery

Belgrove Distillery

Belgrove is at the micro end of the spectrum of Tasmanian distilleries and is one of a range of small but intriguing producers. The most hands-on of these is Peter Bignell’s paddock to bottle rye whisky operation. Both barley and rye are grown on site, harvested, malted, distilled, and the resulting spirit aged in wood and bottled at the distillery by hand. The farm and distillery equipment are bio-fuelled using waste cooking oil from a nearby fish and chip shop! Water used for production is rainfall captured on the roofs of the farm and distillery buildings. And the residual pulp from the distilling process is fed to Peter's livestock as an alternative to their normal feed. They, in turn, provide fertilizer for the next crop of rye - a truly environment friendly operation!
